Conjure up, will you, the hardscrabble 1930s, the dust bowl migration, and the music that sprung from this era—the Bakersfield Sound. This honky-tonk restaurant housed inside an old fire station is on a mission to honor this music, “the juke joints, and the spirited people who inhabited them.” And they do it with aplomb, in a high energy, colorful space framed on one side by the fantastic long bar lined with lots and lots of whiskeys, as well as some tequilas as a nod to their south-of-the-border menu options.

A favorite for brunch, especially when you're facing a visceral need for carbs and cheese brought on by a night of overindulgence, the Silver Dollar brings it home with dishes like the Texas toast stack— a towering creation of bacon, cheddar, fried green tomatoes, fried egg and caramelized onion—and smoked chicken enfrijoladas. Dinner brings its own rewards in the form of barbecue pork and coleslaw, selections from a chili parlor, and their legendary chicken and waffles.
